SWEET DISH OF THE COMMON MAN-JALEBI

The Jalebis 
  YUMMY JALEBIS

Jalebis are easily available and loved by all. It is easy to prepare and sold off within few minutes of its preparation. It loved by all and children adore them even during the fasting days. I think I would not post the recipe here. I would be posting all the photographs in this blog and give away the entire secret  recipe of jalebi in my E-book on THE STREET FOOD OF TUGHALPUR, GREATER NOIDA.

 In this photograph, the man has taken the batter in a piece of cotton cloth and there is a small hole in it. There is a large wok and it is filled with oil. It is placed on a large burner(this would be introduced in another blog). The oil is allowed to reach to the required temperature for the jalebis to be fried in it.One has to observe the way he rotates his fingers, while he holds the cotton cloth, and brings in the desired shape of the jalebi.
 Here it is clearly shown the floral design of the jalebi and the way the man continues to add more and more in the hot oil.
 The jalebis are deeply fried in the wok. If one sees the photograph very closely, one would be able to observe another wok in which the sweet sugar syrup is already prepared by the man. Once the jalebis are deeply fried, they would be immersed in the sugar syrup and kept for few minutes so that the jalebis are well soaked in the it.

We can observe in this photograph that the man has deeply fried the jalebis and soaked them well in the sugar syrup and removed from it. The jalebis are help on a large laddle so that the extra syrup might be allowed to drip from them. There they are ready to be sold off...
